Apricot Chicken Casserole

12 Chicken legs/drumsticks 1 can (410g) Apricots 1 packet (35g) onion soup mix 30ml (2 Tbls.) cornflour 5ml (1 tsp.) ground ginger salt and pepper chopped chives to garnish
|
Preheat the oven to 180 degrees C or 350 degrees F.
Arrange the drumsticks/chicken legs in a casserole dish.
Puree the apricots with their juice, add the soup mix, cornflour and ginger and season with salt and pepper. Pour this mixture over the chicken, cover and cook for 1 hour or until chicken is cooked.
Garnish with the chopped chives and serve with rice.
