1 lb. bag frozen broccoli/carrot mix 1 can water chestnuts 1 can (13oz) chicken 1 small onion, chopped fine 2 eggs 3/4 cup shredded cheese 1 can cream of chicken soup 1 can cream of mushroom soup 1 Tbls. mayo (optional) 1 Tbls. butter, not margarine 1/2 sleeve Townhouse crackers(crumbled fine) butter flavor nonstick cooking spray pinch salt pinch garlic powder (optional) 1/4 tsp. black pepper

Microwave or steam broccoli/carrot mix and water chestnuts until tender. Do not overcook.
Combine all ingredients, except the crackers, mix well. Pour evenly into a sprayed baking dish.
Cover top with cracker crumbs and spray the top evenly with a butter flavor cooking spray.
Bake 30 minutes at 325 degrees F.
Substitutions: Cauliflower for water chestnuts
Any cream of vegetable soup for the mushroom soup
Any butter flavor cracker for Townhouse brand.
