Daddy's Enchiladas Casserole |

1 pkg. medium flour tortillas (10-12 tortillas) 2 16 oz. cans chili without beans 1 16 oz. can chili with beans 1 medium onion diced (optional) 1 32 oz. block of cheese shredded (jack/colby blend is best)

Preheat oven to 300 degrees F.
Open and warm all three cans of chili in a saucepan on stove, til bubbly. Shred cheese. Dice onion finely.
Warm flour tortillas in microwave til soft.
Lightly coat a 13x9 glass dish with non-stick spray.
Generously fill each flour tortilla with cheese and lightly top with onion placing seam side down until dish is full with cheese stuffed flour tortillas.
Pour the warmed chili all over the stuffed tortillas. Top with remaining cheese and onion.
Bake for 10-15 minutes or until cheese melts.
Wonderful with a fresh garden salad and hot bread!
