Delicious, Low-Fat Mac' and Cheese
1 lb. Whole wheat elbows (or just elbows)
1 medium bag Taco mix shredded cheese
1 medium bag Extra sharp cheddar shredded cheese
1/3 cup cream cheese
1 1/2 cups skim milk
2 tbsp. margarine
fresh grated Parmesan cheese
salt and pepper
1 tsp. cayenne or crushed red pepper (optional)

 

Cook pasta in a large pot. Drain water and place back in same pot. Pre-heat oven to 375 degrees. Add milk, margarine, and taco cheese. On low-medium heat, stir until cheese is melted. Add cream cheese and cheddar cheese. Stir until mixed well and creamy. Add salt and pepper to taste, and cayenne or crushed red pepper if desired. In a well-greased, 13x9 inch pan, put pasta and cheese mixture into. Sprinkle parmesan cheese on top. Bake for 30 minutes, or until bubbling and top is slightly browned and crispy.
