2 medium size russet potatoes 6 washed and cut mushrooms 1/2 cup egg beater or regular eggs 1 cup onions Cheddar or cheese of choice 4 pieces of turkey bacon or meat of choice Salt and pepper to taste
|
Slice and cut potatoes into half inch pieces, slice mushrooms and onions also. Place in non-stick skillet and brown slightly for 20 minutes, or until potatoes, onions and mushrooms are soft. While those cook, brown and cook bacon or meat of choice. When done place in mixing bowl and add all ingredients. Save one cup of the cheese to spread on top of casserole. Transfer to glass casserole dish and bake for 30 minutes. Let cool and serve immediately. Pair with slice of toast on the side or fruit.
