Italian BBQ Meatloaf
Bar-B-Q Meatloaf with an Italian flair
1lb ground lean beef (turkey if you choose)
1/2lb ground Italian sausage
3 slices white (potato bread is fine)bread
1/2 cup diced onion
1/2 cup dices green bell pepper
1 6.5oz can pieces & stems mushrooms in water
1 bottle your choice of BBQ sauce (I prefer Jack Daniels Brand blue label sauce.
1 cup shredded cheese (I prefer to use Italian blend with 5 cheeses)

 

Preheat oven to 375 degrees.
Toast the three slices of bread and leave sit, make sure not to burn, but you do not want it moist int he center. You can season the bread before you toast it with Italian seasoning, or not.
In medium bowl mix the pound of ground beef and the 1/2 pound of sausage together.
Mix in the onion, bell pepper, cheese, mushroom.
Take the three toasted slices of bread and and crush into small even pieces in a smaller bowl. Add the crumbs to the mix.
Now, decide how you want to loaf it. You can do the old fashioned way of packing it into a loaf like your mom and her mom before her used to make it, or you can take your large cutting board, and
flatten the meat out onto the board to make a 10 inch wide, 1 inch thick patty. Then roll it up into a loaf. I like doing it this way. Put into a loaf pan, or a 1 inch shallow pan, and cover with thickly, but evenly, with your BBQ sauce. Be sure to go back and use the drippings to baste the loaf every 15-20 minutes or so.
Cooking time will vary depending on the oven, but mine usually takes about 1:30 to cook completely.
Tip: after about an hour of cooking, I will remove from oven, drain the grease, apply fresh BBQ sauce, then return it to the oven.
