Jambalaya Low fat, Low Sodium Rice Entree |

1 lb. fat free Polish Sausage, cut into desired size pieces 1 lb. cooked chicken breast, (stewed or boiled), cut up 2 celery ribs, chopped 1 medium onion, chopped 1 medium green pepper, chopped 2 (14 1/2 oz. can fat-free, reduced sodium chicken broth) 1 1/4 cup long grain rice 1 1/2 tsp. creole seasonings, salt free, if available

Saute vegetables in small amount of chicken broth till wilted, add meats, rice, remaining broth and seasonings.
Bring to boil, reduce heat and simmer 20 minutes. Remove from heat. Let stand 10 minutes.
Serve.
