Layered Tex Mex Casserole This Will Knock Your Socks Off!!! |

3 cups (750 mL) instant brown Minute Rice 1 1/2 cups(375mL) hot water 1 lb (500 g) lean ground beef 1/2 cup (125 mL) barbecue sauce 19 oz (540mL)can stewed tomatoes 14 oz (398mL) can kidney beans, drained 1 1/2 Tbls. (25mL) chili powder 1/2 tsp. (2 mL) garlic powder 1/2 cup (125 mL) grated cheddar cheese 1/4 cup (50 mL) sliced pitted olives (optional) 2 green onions, thinly sliced (optional)

Heat oven to 350F (180 C). Place rice in a 3 quart (3 L) casserole dish. Add hot water; cover and let stand for 5 minutes. Meanwhile, brown meat in a large frying pan. Add bbq sauce, tomatoes, beans, and chili powder; mix well. Bring to a boil. Spoon meat mixture over rice. Sprinkle with cheddar cheese. Cover and bake for 30 minutes. Garnish with olives and green onions. Makes 8 servings.
