Mexican Casserole
2 lbs. ground beef
1 can enchilada sauce
1 large onion
garlic
chili powder
salt and pepper
2 cans crean of mushroom
2 cans chopped chili peppers
chedder cheese, shredded
tortilla chips

 

Grease and line a 9x13 casserole dish (bottom and sides) with tortillas broken into bite size.

Brown meat with onion. Drain grease.

Add garlic, salt, pepper, chili powder, cream of mushroom soup, green chilies and enchilada sauce into a medium-size sauce pan and heat.

Put meat in first layer over the tortilas and then a layer of cheese.

Next put soup mixture on top of cheese.

Cover with another layer of cheese and bake at 350 degrees F. for one hour.

It is better if you make it up at least a hour before baking. I let it sit overnight.
