Mexican Shepherds Pie
An Old Favorite with a Mexican Ole!
1 lb. Ground beef,
2 onions
1kg frozen corn
1/2 of a 35 gram pouch taco seasoning
10 medium potatoes
1 cup cheddar cheese
1/2 cup fresh parmesian
2 Tbls. beef base
garlic
1/2 cup cracker crumbs
1/2 cup water

 

Boil the potatoes then drain. Mash the potatoes.

Take ground beef and fry in frying pan until brown. Drain the oil.

Add the onion, garlic, beef base, taco seasoning and water to the ground beef. Let simmer and reduce for 20 minutes.

Place the ground beef mixture in the bottom of a casserole dish.

Add the corn and pipe the potato on top.

Sprinkle the cheddar, parmesian cheese and bread crumbs.

Bake the casserole for approximately 30 minutes in 350 degree F. oven.
