Paella II
The Best Paella I Ever Ate!
1/2 lbs sausage
2-3 lbs chicken
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
2 cloves of garlic, minced
1 1/2 cups of yellow rice
2 tomatoes, peeled and chopped
4 cups boiling water
10 ounces frozen peas
shrimp
scallops

 

In a large skillet, cook sausage until done. Drain, reserve drippings. I

In skillet, season chicken and brown in reserve drippings. Remove chicken and saute onion, peppers and garlic. Stir in uncooked rice, tomatoes, and boiling water. Put in a large pot or roasting pan. Arrange chicken and sausage on top.

Bake, covered, at 375 degrees F. for 30 minutes. Longer is ok just check and add water if necessary. Add Peas, Shrimp and Scallops during last 10 minutes.
