Pollo Picante Spicy Chicken Casserole |

4 boneless chicken breasts 1 jar salsa, the chunkier the better 1 4.5oz. can chopped green chilies 3 Tbls. brown sugar 1 Tbls. Dijon mustard 1 red onion, thinly sliced 2 Tbls. butter 1 Tbls. sherry 1 tsp. cayenne pepper (more if you like) 2 cups cooked rice Shredded sharp cheddar cheese for garnish

Preheat oven to 400 degrees F.
Prepare 2 cups of rice as directed on the package.
Slice onion into strips and caramelize with the butter, sherry and cayenne.
While onions caramelize, cut chicken into small chunks.
Mix together the salsa, chilies, brown sugar, mustard and chicken chunks in a bowl and set aside.
Add the caramelized onions to the bowl of other ingredients. Mix well.
Put in baking dish and bake at 400 degrees F. for 20-25 minutes.
Serve over rice and top with cheese.
