Potatoes and Ham Casserole Use Leftover Ham to Make This Delicious Casserole! |

6 small-medium sized Yukon Jack potatoes 1 small onion, chopped 1 1/2 cups cooked ham, cubed 3 slices process Swiss cheese salt and pepper olive oil

Chop potatoes into bite-sized pieces and spread evenly in a casserole dish that has been sprayed with olive oil.
Lightly spray top of potatoes with olive oil; sprinkle with salt and pepper.
Cover with wax paper and microwave until potatoes are tender about 8 minutes.
Spread chopped onion over potatoes, toss and recover. Microwave for 2 minutes more.
Toss cubed ham in the potato mixture. Top with cheese slices and cook until ham is heated and cheese is melted for about 10 minutes.
