Tuna Fish Casserole

1 pkg. short pasta (your favorite shape) 1 block or about 2 1/2 cups cheddar cheese (we like medium, but any age will do) 3 Tbls. butter or margarine 5 Tbls. all purpose flour + more as needed 3 cups milk 1 or 2 tins tuna (depends on how much you like it, I usually use 2) 1 cup frozen corn (optional) 1 cup frozen peas (optional) bread crumbs any other favorite cheese (parmesan and feta are 2 that I use)

Preheat oven to 350 degrees F.
Boil some salted water and cook pasta as directed.
While the pasta is cooking, grate the cheddar cheese and set aside.
In a medium saucepan, over meduim heat melt the butter. When the butter is completely melted, add the flour, one tablespoon at a time stirring constantly with a whisk. You should end up with fluffy (not wet) balls of flour, add more flour a little at a time until you do get the balls.
Add milk to the saucepan slowly, stirring constantly with the whisk. Stir the milk mixture until it thickens and is almost boiling. This takes about 10 minutes, so be patient.
After the milk mixture is thick, reduce the heat to medium low and add 1/3 of your grated cheddar cheese about a handful at a time, allowing the cheese to melt completely.
Now you can add your tuna, remember to keep stirring with the whisk. You don't want your cheese sauce to burn! After the tuna has been added, you can fancy up your sauce with frozen peas and corn.
Drain the pasta and put it back in the pot. Add the sauce to the pasta and gently stir with a wooden spoon.
Transfer the mixture into a baking dish that is big enough to accomodate the casserole.
Now you can sprinkle the rest of the cheddar cheese and the other cheeses you have chosen on top of the casserole. Finish off by sprinkling breadcrumbs over top of the cheese, in a thin layer.
Now bake the casserole for about 20 - 30 minutes or until the cheese on top has melted and browned. You can use instructions 4-6 to make a cheese sauce for broccoli and cauliflower!
