Tuna Monte Cristo
Ingredients:
3 large pancakes to fit the size of a square baking dish 1 white onion, minced 1 - 24oz tub of Sour Cream 2 cans albacore tuna 3 cups shredded sharp cheddar cheese Butter Dash of Lee and Perrins Salt and Pepper to taste.
Directions:
Make the 3 large pancakes in advance. Melt butter and saute the minced onions. Set aside. Heat the oven to 350. In a large mixing bowl, flake the tuna. Add salt, pepper and Lee & Perrins. Add 1/2 the tub of Sour Cream. Mix well. Spray a square baking dish with cooking spray and place 1 of the pancakes at the bottom. Spread 1/3 of the remaining sour cream on the pancake. Spread 1/3 of the tuna mixture. Sprinkle 1 cup of the shredded cheddar. Repeat this process 2 more times until the last cup of cheddar cheese is on top. Make a tent with foil on the baking dish and place in the heated oven for 15 minutes. Take the foil off the baking dish and bake an additional 15 to 20 minutes. Let set for 5-10 minutes. Cut into cake-type slices and serve! Serves 4-8 people depending on how big a slice each person is served.
