Turkey Sausage and Pasta Stew A hearty, warm dish made in the Crock Pot! |

1.5 lbs. (5 large links) Sweet Italian Turkey Sausage, casing removed. 6 Large Ripe Tomatoes 1 Medium Red onion 2 Large green bell peppers 2 fresh banana or spicy peppers 1 lb. peeled baby carrots 1 Zucchini 1 Yellow Squash 2 Cups cooked rotini or penne pasta 5T Extra Virgin Olive Oil 1 C Water 3/4 C Chicken Stock 2tsp. garlic powder (fresh garlic if preferred) 1T Italian Seasoning 1/2C Finely Shredded Romano Cheese Salt and Pepper to Taste

Chop tomatoes, peppers, onions, zucchini, squash. Cut baby carrots in half. Add all to crock pot on low. Add in turkey sausage, breaking into pieces. Add in chicken stock, water spices and olive oil. Mix together until all pieces are evenly coated with spices. Leave cook on low for 3-4 hours.
After 3-4 hours, add in pasta. Cook on low for an additional hour.
Salt and pepper to taste.
Serve while piping hot, sprinkle with romano cheese.
