Vegetable Chicken Stir-Fry A Quick Easy Recipe for Dinner or Lunch! |

3 Tbls. vegetable oil 2-3 garlic cloves minced (just peel layers until you find somethiing similar to apple slices) 1 Tbls. ginger, minced 1/2 - 1 lb. of skinless, boneless, chicken breasts, cut into strips 1 medium onion, diced 2 carrots sliced 1 red bell pepper, seeded and sliced into thin strips (opt.) 1/2 cup soy sauce 1 Tbls. pepper

Heat oil in a wok or large skillet over medium-high heat.
Add garlic and ginger. Cook for 1 minute.
Add chicken and cook 3-4 minutes, until chicken is brown, stirring constantly.
Add onions, carrots, and peppers. Cook 1 minute.
Add soy sauce, cook 2 minutes until veggies are crisp and tender.
This can be served over steamed, fried, or any rice.
