Viva Cabbage Rolls Cabbage Rolls with a Spicy Flair! |

1 1/2 cups cooked Converted rice 1 small onion, diced 1 small yellow zucchini, diced 2 cloves minced garlic 1 Tbls. butter 1 egg, slightly beaten 1/4 cup plain bread crumbs 1/2 lb. ground beef 1/2 lb. pork chorizo 1 head cabbage Salt and pepper, to taste

Saute onion, yellow zucchini, and garlic in butter. After onions become translucent, add ground beef, chorizo, egg, rice, plain bread crumbs, and salt and pepper. Cook until meat is brown. Set aside.
Remove core from cabbage. Boil entire head of cabbage and remove leaves as they soften with tongs. Place leaf in ice water to cool so you can work with it. Place a couple of tablespoons of meat mixture in center of cabbage leaf and roll. Use a toothpick to secure. Place in an oven safe pan. Bake at 350 degrees F. for 45 minutes.
Serve with mashed potatoes.
