Apricot and White Chocolate Cookies
1/2 cup brown sugar
2 Tbls. white honey (optional)
1/2 cup butter, room temperature
1 egg
1/2 tsp. almond extract or 1 tsp. amaretto
1/2 tsp. vanilla extract
1 cup flour
1/2 tsp. baking soda
1/4 tsp. salt
5 oz. white chocolate, coarsely chopped
3/4 cup dried apricots, finely chopped

 

Mix brown sugar, white honey, and butter until smooth. Add egg and vanilla and almond extracts. Mix until smooth.

Sift flour, baking soda and salt together. Add to the brown sugar based mix. Blend.

Stir in white chocolate and apricots.

On a parchment-covered cookie sheet, form each cookie with a Tablespoon, approximately sixteen. Bake for 15-20 minutes and check often as these cookies tend to flatten out if not watched. Enjoy!

I made these cookies for my boyfriend and he nearly cried, they were so good. I was inspired by a a bottle of Amaretto Di Saronno we have sitting on our bar. I wanted a slightly almond flavored, smooth, but very flavorful cookie. This definitely hits the spot.
