Chewy Cinnamon Granola Cookies

¾ cup whole wheat pastry flour A little less than ¾ cup light brown sugar ½ tsp. salt (a large pinch or two) ¾ tsp. ground cinnamon (add as much as you like) ½ tsp. baking soda ¾ stick butter, softened 1 egg 1 teaspoon vanilla extract (or a tiny bit more if you want) 3 mashed Nature Valley Oats and Honey bars

Preheat oven to 375 degrees F.
In a large bowl, stir together flour, brown sugar, salt, cinnamon and baking soda. Soften the butter (I do it in the microwave) until it is very soft. Let it cool to about room temperature. Crack the egg in the bowl and whisk. Put in vanilla. Next, put in butter, and then whisk it until smooth. Batter will be thick.
Take out 3 Nature Valley Oats and Honey granola bars (they come two in a package, so six bars total). Smash two at a time in a Ziploc bag (I use the bottom of a ladle to smash it). When they’re all smashed up, add them to the cookie dough. Mix it with a rubber spatula until the granola is mixed in well.
Measure about 1 ½ teaspoons of batter onto a cookie sheet for each cookie. You will have to do batches. Bake for 8-12 minutes, depending on the size of your cookie. They will be very soft when they come out, but will harden as they cool. Wait 10 minutes before you put them on a plate.
