5 1/2 lb. Digestive Biscuits 2 1/2 lb. Melted Butter 2-4 oz. Cocoa Powder 3 pints Cream 2 pints Milk 18 Egg yolks 10 oz. sugar 2 tins Coconut Milk 26 Geletine Leaves 6 oz. Desiccated Coconut

Mix the biscuit with the butter and the cocoa and place 1/2 in the bases and save the other 1/2 for the topping.
Whip the cream to soft peaks and place in the fridge.
Beat the eggs and the sugar to the ribbon stage.
Bring the milk to the boil, add to the egg mix and return to the stove to cook out.
Soak the geletine and add to the milk.
Add the coconut and the coconut milk.
Leave to cool and fold in the cream, leave to set.
Once cool slice and sprinkle on the topping and pipe with chocolate.
