Mixed Nut Turtle Cookies From My Culinary Arts Class 1945 |

3/4 cup butter, softened 1/2 cup sugar 1 egg yolk 1 tsp. vanilla 1 1/2 cups all purpose flour 1 10oz. can mixed nuts, containing almonds,macadamia nuts and cashews 1 1/2 cups semi-sweet chocolate morsels 2 tsp. shortening

Beat butter at medium speed in mixer until creamy. Gradually add sugar, beating well.
Add egg yolk and vanilla, beating well. Add flour, beating just until blended.
Drop dough by level Tablespoon fulls, 2-inches apart, onto an ungreased cookie sheet.
Flatten each ball of dough to a 2-inch circle, using fingers.
Cut large macadamia nuts in half. Alternating nut types, press nut pieces firmly into outside top edges of cookies.
Bake at 350 degrees for 10-12 minutes or until edges of cookies are lightly browned. Cool on cookie sheets for 1 minute. Carefully remove cookies to wire racks to cool completely.
I place wax paper on mica countertop and using a spatula, remove each cookie to this surface to cool.
Place chocolate and shortening in top of double boiler over hot water. Stir constantly until melted. Spoon one heaping teaspoon of the melted chocolate onto the center of each cookie. Spread and smooth the chocolate between nuts. Let set until chocolate hardens.
Suggestion: For a very special holiday gift, weave a festive ribbon through a new wire cooling rack, box and wrap. Place note outside the box to keep box upright.
