Mock Apple Bars A Dessert Using Zucchini |

4 cups flour 1/2 tsp. salt 1 1/2 cups sugar 1 1/2 cups margarine
Filling: 6 to 8 cups zucchini, peeled, seeded and sliced as an apple 2/3 cup bottled lemon juice 3/4 cup sugar 1/4 tsp. nutmeg 1/2 tsp. cinnamon another 1 tsp. cinnamon

Combine the first 4 ingredients as for pie crust, cover bottom of ungreased 10x15 pan with 1/2 inch of the mixture. Pat down and bake at 350 degrees F. for 10 minutes.
Cook zucchini in lemon juice till tender, add the rest of the ingredients except for the last 1 tsp. of cinnamon. Simmer a few minutes and add 1/2 cup of the remaining crust mixture to thicken the zucchini mixture.
Cool, spread on baked crust. Add remaining cinnamon to remaning crust mixture, mix and spread over top of filling. Bake 30 minutes more, till filling is bubbly.
