My Mother's Sugar Cookies

2 eggs
2/3 cup Wesson oil
2 tsp. vanilla
l tsp. lemon rind - grated
3/4 cup sugar
2 cups sifted flour
2 tsp. baking powder
l/2 tsp. salt

Heat oven to 400 degrees F.
Beat eggs with fork. Stir in Wesson oil, vanilla and lemon rind.
Blend in sugar until mixture
thickens.
Sift together flour, baking
powder and salt.
Mix oil mixture with flour mixture.
Drop by teaspoons about 3 inches
apart on ungreased cookie sheet.
Gently press each cookie flat
with a sugar coated small glass
which has been moistened with oil.
Bake 8 minutees at 375 degrees F. or 400 degrees F. depending on your oven.
Decorate with sprinkles, nuts,
cherries, raisins, etc.
