No-Bake Lemon Squares
No One Will Believe You Didn't Bake Them! |

1 x 8 oz packet plain sweet cookies
3 oz. dessicated coconut
4 oz. melted butter
1/2 can sweetened condensed milk
Icing:
1 1/2 cups icing sugar
Juice of 1 lemon and rind, if wished
|
Crush biscuits and add the coconut.
Add condensed milk to melted butter. Pour into cookie mixture and mix well. Press into a 9 inch square tin.
Pour lemon icing on top.
Place in refrigerator until set and cut into small squares.
