Old Fashioned Sponge Toffee A Crispy Crunchy Treat Everyone Will Love! |
3/4 cup Corn Syrup 3/4 cup white sugar 4 tsp. baking soda
Combine the corn syrup and sugar in a saucepan and bring to a boil, stirring often. When the mixture thickens substantially, drop a ball into a glass of cool water. It should turn into a thread of candy and become very brittle.
At this point, add the pre-measured baking soda and stir the still-boiling mixture rapidly. The mixture will rise so you have to have this in a deep saucepan and keep stirring it.
When the color turns a really nice golden brown and is hard to stir, pour it into a buttered pie plate or bar pan. Let settle and cool until hard.
