Quik-n-Easy Peanut Butter Cookies Great One for the Kids to Make! |

1 cup peanut butter, creamy 1 cup sugar, light brown or granulated 1/4 cup shortening 1/2 cup boiling water 2 cups Bisquick Biscuit Mix
|
In a large bowl, blend the peanut butter, sugar, shortening and water with an electric hand mixer until smooth.
Stir in Bisquick. Drop by small teaspoon fulls onto a lightly greased baking sheet. Press with a floured or wet fork and bake in a 400 degree F. oven for 8-10 minutes.
Note: Optionally you can add a teaspoon or less of vanilla extract.
While warm you can also sprinkle with confectionary sugar.
