Refrigerator Spice Cookies
2 3/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1 cup vegetable shortening
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg

 

Combine the flour, baking soda, and spices.

In a large bowl, cream the shortening and sugars. Beat in the egg. Gradually blend in the dry ingredients.

Divide the dough in half. Form each half into a log 1 1/2 inches in diameter. Wrap in waxed paper and chill for 8 hours.

Preheat oven to 375 degrees F. Lightly grease 2 baking sheets.

Cut the logs into 1/4 inch-thick slices. Place 1 inch apart on the prepared baking sheets.

Bake for 10 to 15 minutes, until lightly colored. transfer to wire rack to cool.
