1 1/4 cups (190 grams) plain flour 1 Tbls. (10 grams) rice flour 2 Tbls. (40 grams) caster sugar 125 grams softened butter 1/2 tsp. vanilla essence

Set oven at 160 degrees C.
Brush or spray oven tray with oil or cover base with baking paper.
Sift flours, add sugar and rub in butter. Add vanilla essence. Work into stiff dough. Turn onto a lightly floured board/counter and knead well.
Divide mixture into 3 or 4 portions. Roll each portion about 1 cm thick. Cut into desired shapes. Put on oven tray.
Bake at 160 degrees C. for 20-25 minutes or until light brown.
Cool on a cake cooler.
