Chocolate Cloud Cake
Fluffy Chocolate Cake
1 cup flour
1 Tbls. baking soda
1/2 cup sugar
1/4 cup milk
2 cups melted chocolate morsels
2 lg. eggs
1 Tbls. butter
1/2 cup water
2 tsp. vanilla extract

 

Preheat oven to 350 degrees F. Grease a square or round cake pan with non-stick cooking spray with flour. Set aside.

In a small bowl, combine flour, baking soda, and 1/4 cup sugar (will use rest of sugar below). Mix until all ingredients are well-blended.

In a separate larger bowl, combine milk, melted chocolate morsels, eggs, remaining 1/4 cup sugar, butter, water, and vanilla. Mix with electric mixer on low speed for 2 minutes or until batter is smooth.

Slowly add the flour mixture while continuing to blend on low speed speed until all ingredients are combined. The batter should be fluffy (like a mousse).

Spoon the batter into the cake pan and bake at 350 degrees F. on the center rack for 30 minutes.

Check for doneness by inserting a toothpick into the center of the cake. If toothpick comes out clean, the cake is done. If it is not done after 30 minutes, continue cooking for 5 minutes and checking until cake is done.

Let cool for 20 minutes or longer before serving.
