Chocolate Mousse Rich and Delicious French Classic |

3 eggs at room temperature, separated 30 gms (1 oz.) UNSALTED butter 200 gms (7 oz) good quality dark chocolate 300 mls (1/2 pint) thickened cream

Whip the cream and set aside.
Melt chocolate in a bowl over simmering water. Remove bowl from heat and stir in butter. When butter has melted, stir in the three egg yolks, one at a time. Place mixture in a large bowl, cover and leave to cool.
Beat egg whites into soft peaks. Using a metal spoon, fold the egg whites and cream in two stages into the chocolate mixture.
Pour into individual serving dishes and refrigerate several hours.
Serve with extra whipped cream and shavings of chocolate.
This is worth the trouble for a special occasion.
