Coconut & choc chip cookies
adaptation of nigella cookies
1/2 cup of softened butter or firm margarine
1/2 cup of caster sugar
1/2 cup of brown sugar
1 teaspoon of vanilla essence or 1/2 teaspoon of vanilla extract
2 eggs
1 cup of unbleached or organic flour
3/4 cup of self raising flour
1 pinch of salt
1/2 cup of choc chips, can use milk, dark or white
1/2 cup of milk
1/3 cup of coconut
1/2 cup of sprinkles

 

1. Preheat oven to 180 degrees Celsius
2. Cream butter, sugars, vanilla and milk together
3. Gradually add in lightly beaten eggs
4. Mix in flours, salt and coconut
5. Add choc chips and sprinkles
6. Roll dough into golf ball sized balls and place on tray lined with baking paper
7. Press down on the top of dough balls to flatten slightly
8. Sprinkle with coconut
9. Put in oven for 15 minutes
10. Enjoy!
