Easy Strawberry Ice Cream with a soothing blend of raspberries |

• 500g Strawberries • 200g Raspberries • 1 tsp Vanilla essence • 150g Castor sugar • 50g Granulated sugar • 150g Double Cream • 1/2 a lemon • Water • 2 Bananas

Blend together the fruits (except the lemon) in a blender until smooth and creamy. In a large bowl, fold whipped cream into the fruit purée until soft. Blend together the castor sugar, some water and lemon juice in the blender. In a seperate bowl, pour in the lemon mixture and the granulated sugar. Wait until the sugar has dissolved. This should take about an hour or more. Once the mixtures are bothe ready, mix well together, with some lemon rind, until thick and creamy. Pour into a tub, and freeze. After 2 hours, take out the ice cream and whisk until soft again. Repeat this step once every 2 hours for another 6 hours. Once finished, freeze overnight. When you want to use the ice cream, take it out of the freezer and leave in the fridge for 15-20 minutes, before eating.
