Greco-Russian Roasted Golden Apples

3-4 small golden apples, cored 1/2 cup medjool dates, chopped finely 1-2 cups water 1/2 cup wildflower honey dash nutmeg dash coriander dash cinnamon dash cardamom cloves, optional (I never use this)

Line a deep cooking tray with aluminium foil and pre-set the oven to 325 degrees F.
Core the apples.
In a mixing bowl, mix the chopped dates, spices, and 1-2 tsp. of the honey. Then stuff the apples with this mixture. Place the stuffed apples in the cooking tray.
Add the honey to the water and mix; pour into the tray.
Put the apples in the oven and let it bake for 30 minutes, more or less depending on how golden you like them to be. Check after about 20 minutes.
Serve with whipped cream, a mint leaf garnish, and a hint of nutmeg on top. I make a wild blueberry relish to go with this served on a bed of mint leaves.
