Hazel's Christmas Pudding Rich Fruit Christmas Pudding |

4oz. soft brown sugar 4oz. suet 3/4 lb. minced dried fruit (sultanas, raisins, currants) 2oz. mixed peel 2oz. plain flour 2oz. white bread crumbs 2oz. flaked almonds grated rind of 1 lemon 2 eggs 1/2 tsp. mixed spice 1/2 tsp. salt 1 bottle of guinness

Put all dry ingredients in a bowl. Crack in eggs. Pour in guinness and mix everything together.
Put in a 2lb. pudding bowl. Cover with greaseproof paper. Secure with string and steam for 6 hours. Make at least 8 weeks before Christmas.
Steam for 1 hour on Christmas Day. Serve with brandy butter or whipped cream.
