Healthy Bread Pudding
Whole Grain and Sugar Free
5 eggs
1 1/4 cups milk
1 cup splenda
1 cup milk
1/4 cup buckwheat pancake mix(optional)
5 slices whole grain bread torn into pieces(6 slices if NOT using pancake mix)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. vanilla
1/4 cup butter
1/4 cup raisins (optional)
1/4 cup unsweetened whole wheat flake cereal, crushed

 

TOPPING: Crush 1/4 cup whole grain cereal - set aside.

BREAD PUDDING: Tear up bread and put in 9 inch casserole dish. Set aside.

Slightly beat eggs and milk. Add splenda(sugar), pancake mix, butter, cinnamon, nutmeg, vanilla and raisons. Pour over bread and toss until coated.

Sprinkle crushed cereal evenly over top of bread mixture.

Bake uncovered at 350 degrees F. for 40 minutes or until sides start to pull away from sides of casserole dish.

Serve topped with Cool Whip or just add more milk.

I came up with this alternative to an old favorite because like many others I have greatly cut down my sugar intake and no longer eat white bread. All the low sugar recipes were still using white bread, and I thought why can't you use whole grain bread? So for all of you who thought you couldn't indulge in this old favorite think again! ENJOY!
