Heavenly Banana Coconut Sorbet
3 ripe bananas
1 can (15 oz) full fat coconut cream or milk
3 cups water
1 1/2 cups raw sugar

 

Bring water to boil; add sugar and stir. Simmer for 5 minutes.

Peel and chop bananas into food processor. Add coconut cream or milk. Process for 3 minutes until well mixed.

Stir banana coconut mixture into cooling sugar mixture.

Place resulting mixture into refrigerator for 2+ hours.

Prepare ice cream maker and pour mixture into ice cream maker. Process and freeze according to ice cream maker instructions.

Enjoy! This is a very rich sorbet which tastes similar to true ice cream because of the fat in the coconut cream/milk.

NOTE: If you have a smaller ice cream maker (the kind you store in the freezer), this recipe makes approximately two batches. It may fit, but bananas do not freeze as easily as was intended for your ice cream maker.
