Ice Box Cake An old-fashhioned treat from the ice box days |

3 small packages (or 2 large packages) chocolate pudding mix (not instant pudding.)
about 1 1/2 boxes graham crackers
6 cups milk
|
Cook the pudding mix with the six cups of milk as directed on package. Ladel 2 or 3 cups of the hot pudding into a 9 by 13 cake pan, spreading around evenly with a rubber spatula. Arrange a layer of graham crackers on pudding, covering completely (you may need to cut or break some of the crackers to cover completely.) Press down firmly so that some of the pudding oozes up in the cracks between the crackers. Add more pudding and repeat with a second layer of crackers. Keep layering pudding and crackers till you run out of pudding. Cover tightly with alumimum foil or plastic wrap and refrigerate at least 24 hours. The result will be a cake that you can cut and serve in squares to be eaten with a fork. An oldtime treat from the ice box days. For variety use a different flavor of pudding--vanilla, butterscotch, etc.
