KAJJIKAAYALU
A Variety Coconut Stuffed Traditional Sweet
500 grams of All purpose Flour.
100 grams of Corn flour.
350 grams of Clarified Butter (Ghee).
500 grams of Refined Oil.
350 grams of Sugar powder.
5 Cups of Coconut Powder (Raw).
2 Cups of Sasame seeds.
2 Small spoons of Cardamom powder.
1 spoon of Cooking soda.

 

Mix both all purpose flour and corn flour. Add cooking soda and ghee and prepare a thick dough. Kneed well and set aside. Make a rough powder of sasame seeds by pounding.

Slightly fry the coconut powder and sasame seed powder in ghee until they turn brown. To this add the sugar powder, cardamom powder and remaining ghee. Mix thoroughly. Prepare small round balls.

Prepare 4-5 inch wide circular thin pan cakes with all purpose flour dough. Put one each of the coconut powder balls in the center of each pan cake, fold and seal at the edges by pressing.

Heat oil in a deep bottomed pan and deep fry the above stuffed preparations on medium flame until they are fried deep brown.

SERVE HOT.
