MANGO - EGG AND MILK PUDDING
MANGO SPECIAL
*Vanilla, one of the ingredients used in the preparation of mango special pudding is extracted from vanilla beans. The characteristic flavor of vanilla is due to the presence of vanillin. Though vanilla was first cultivated in Mexico, it is now cultivated in all most all regions due to its wide range of culinary use. Vanilla essence is used in the preparation of ice creams, custards, chocolates, cakes and juices.


Ripe & Sweet Mango Pulp : 2 Cups
Whole Milk : 1 Liter
Condensed Milk : 1 Cup
Poultry Eggs : 4 nos
Sugar : 300 grams
Ghee : 1 Table Spoon
*Vanilla Essence : Few Drops
Vanilla Ice Cream (optional) : 4 Scoops
Cardamom Powder : 1 Tea Spoon

 

1. Add milk to a pan, add cardamom powder and boil till the volume reduce to two thirds. Filter to remove cardamom particles. Add condensed milk, mango pulp, vanilla essence, sugar and the contents of all eggs and blend vigorously so that all the ingredients are blended well.

2. Take a thick bottomed vessel, apply ghee to the inner surface and transfer the ingredients from pan into the greased vessel.

3. Take a pressure pan, add three cups of water. Place the vessel with ingredients in the center of the bath, place the lid and cook for about twenty minutes on medium flame. The contents get solidified.

4. Remove the vessel from pressure pan and invert it on a plain plate. The pudding settles on the plate.

5. Serve Hot.

Refrigerate the pudding for about two hours and serve in ice cream cups topped with a scoop of vanilla ice cream.
