Murrays Steamed Fruit Pudding Vanilla Sauce

2 Tbls. butter (25 ml) 2 Tbls. all purpose flour (25 ml) 1 1/2 cups hot milk (375 ml) 1/4 cup granulated sugar (50 ml) 1 egg yolk 1 tsp. vanilla (5 ml)

In a saucepan melt butter over medium heat.
Blend in flour, stirring continually until bubbles form.
Add just enough hot milk to get a consistency of paste.
Gradually stir in remaining milk, stirring constantly until smooth and thickened.
Place yolk in a bowl and stir in about 1/4 of hot mixture, whisking constantly until smooth.
Add egg yolk mixture to saucepan and whisk over very low heat for one minute or until thickened. Contents can burn easily.
Remove from heat and add vanilla.
Serve sauce over individual pudding servings.
Sauce can be made ahead and refrigerated, reheat in microwave just before serving, a bit of butter may be added to restore consistency.
