Pavlova
New Zealand Recipe!
2 egg whites
1 1/2 cups caster sugar(powdered sugar)
1/2 teaspoon vanilla
1 teaspoon white vinegar
1 teaspoon cornflour (cornstarch)
4 tablespoons boiling water

 

Place all ingredients into a medium sized bowl and beat with a electric beater until mixture is smooth, shiny and stiff - about 12 minutes. Meanwhile place a sheet of greaseproof paper on a baking tray. Brush lightly with melted butter and dust with a little cornflour - shake off excess. Spoon meringue mixture onto prepared tray, forming a 23cm (9in) circle. Bake in middle of oven, 180 C (350 F) for 10 minutes, reduce heat to 150 C (300 F) and bake a further 45 minutes. Allow to cool in oven.

Filling:
1 1/4 cups cream
1 tablespoon icing sugar
sliced KIWIFRUIT, strawberries etc..

Whip cream with icing sugar until stiff. Spread on top of cooked pavlova. Top with fruit.

Preparation Time: 90minutes Serves: 1 hungry kiwi or 6 ppl
