Pumpkin Pudding
Pumpkin Halwa - A Special Dessert
Pumpkin is a gourd-like squash and is grown through out the world except in Antarctica. It is said to be very good for the people with type-1 diabetes as it contain materials which activate pancreatic cells and increase insulin production. Pumpkins have many culinary uses. Native to west Europe, pumpkins are widely cultivated in Americas, India, China and several other countries.

2 cups of grated ripe pumpkin.
2 cups of thick Milk.
2 cups of Sugar.
1 spoon cardamom powder.
4 spoons of almonds.
50 grans of Cashew nuts.
50 grams of raisins.
200 grams of Clarified Butter (Ghee).

 

Take four cups of milk and boil it until reduced to half. Add the pumpkin grate and cook on low flame until the pumpkin becomes tender. Add sugar and cardamom powder and continue to mix until the mixture thickens.

Soak the almonds in warm water and remove the outer coat. Shred them into fine pieces. Cut the cashews into pieces. Fry the cashew nut and almond pieces and raisins in two spoons of ghee. Add them, and the remaining ghee to the dough and mix well. Cook for two minutes on low flame, constantly mixing the contents.

SERVE HOT.
