Tiramisu a la Leigh Italian Dessert |
|
|
1 pkg. lady fingers (a.k.a. savoiardi) 5 egg yolks 2/3 cup sugar 1 container mascarpone cheese (8 oz.) 1/2 container Philly cream cheese (8 oz.) 1 cup whipping cream 3 cup freshly made strong coffee 2-3 shots Kahlua Cocoa powder
|
Note: I make this a day ahead. I feel that the mixture settles better with a little time.
1. Make the coffee and add shots of Kahlua to taste. 2. In a large bowl, beat the egg yolks with the sugar till the mixture is thickened.
3. Mix in the mascarpone cheese and Philly cream cheese.
4. In a medium bowl, whip the cream till stiff peaks form and fold gradually into the cheese mixture.
5. In a Pyrex square baking dish, pour half the coffee and let it cool a little.
6. Lay no more than 2 or 3 lady fingers in the coffee at a time, turning them frequently--you don't want them in there any more than 20 seconds or so (otherwise, they'll fall apart when you try removing them). The idea is to saturate them, though. Using a spatula helps you to remove them without breaking any.
7. Lay the lady fingers in a rectangular Pyrex dish, making your first (bottom) layer.
8. Spread the cheese mixture evenly on top of the first lady finger layer--be generous.
9. Make your next layer of lady fingers.
10. Top the lady fingers with the final layer of the cheese mixture--again, be generous, because the lady fingers will absorb some of the moisture.
11. Sprinkle cocoa powder on top and refrigerate. The mixture will stiffen up overnight for easy cutting the next day!
