Easy Roast Duck
3-4 small ducks
bacon grease
Kitchen Bouquet liquid seasoning
Apple Butter (2 tablespoons)
Apple juice (1/2 cup)
1 large onion
Butter (1/4 cup)
Salt/Pepper
1 can chicken or beef broth
2-3 cubes chicken or beef boullion

 

Sear ducks in bacon grease in a large skillet to seal in juices. Place seared ducks in roasting pan (lightly sprayed with non stick spray). Season with a few drops of Kitchen Bouquet (rub onto skin). Next, rub the apple butter onto the ducks. Drizzle 1/4 cup melted butter over ducks. Add sliced onion to inside duck cavities. Salt/pepper to taste. Pour one can of broth in bottom of pan (do NOT pour over ducks, or you'll rinse the seasoning off). Add 2-3 cubes boullion. Seal with foil, and bake at 250 degrees for 2 1/2 to 3 hours or until tender. When ducks are tender, remove from pan. Use drippings to make duck gravy (I whisk in an envelope of Pioneer brand country gravy mix with the drippings. Makes very good gravy.) Enjoy!
