Elk Steak Any Venison Will Do... |

2 lbs elk steak, 1 inch thick, cut into serving pieces 2 Tbls. butter 4 Tbls. flour 1 15oz. can cream of mushroom soup 2 soup cans of water 1 cup celery, diced 1/2 onion, diced 1 clove of garlic, diced 1 small can of sliced mushrooms or 4 oz. fresh, sliced dash of salt and pepper

Melt butter in a skillet and add garlic. While butter is melting trim fat off steaks. Flour steaks and brown well. Put in one can of water and simmer for 1/2 an hour. Add salt and pepper. Pour on soup and remaining water mixed together. Add celery, onions, and mushrooms. Simmer gently for an hour.
