Festive Meat Pie

1 1/2 lbs. ground beef 1/2 cup tomato juice 2 eggs, beaten 1/2 cup soft bread crumbs 1 1/2 tsp. salt 1/2 tsp. freshly ground black pepper 1/4 tsp. oregano 2 cloves garlic, minced 3 tbsp. minced parsley 8 slices cooked ham 8 slices mozzarella cheese

Mix together all the ingredients but the ham and cheese. Cut a piece of waxed paper sixteen inches long. Pat out the meat mixture on it into a 10x16 inch rectangle. Arrange the ham and cheese on the meat, then roll up like a jelly roll, using the paper to help. Place in a greased loaf pan. Bake in a 350*F oven 1 hour. Truely delicious! Serves 6-8
