Kaczka Pieczona z Jablkami (Roast Duck) Polish Roast Duck with Apples! |

4-5 lb. duck salt marjoram 1 bud mashed garlic (optional) 2-2 1/2 lbs. apples 1 Tbls. water
|
Wash the duck and pat dry. Rub inside and outside with the salt, marjoram, and garlic. Place in a covered container and let stand at room temperature for 1 hour. Peel, core, and cut into quarters enough apples to fill the duck's cavity. Sew up. Place the duck on a rack in a roasting pan and roast in a pre-heated oven at 450 degrees F. for 10 minutes. Reduce to 350 degrees F. and roast for 80 minutes to 2 hours or until the duck is fork-tender. Sprinkle with 1 Tbls. of water at the start of roasting and puncture with fork at intervals to release fat. Baste occasionally with pan drippings.
Serve with mashed or boiled potatoes. Stewed red or white cabbage or braised beets are typical accompaniments.
