Stuffed Goose A Holiday Favorite! |

1 goose (6-8 Lbs) juice from 1 lemon salt and pepper 1/4 cup butter 1/4 cup onion, chopped 1 cup tart apples, chopped 1 cup dried apricots, chopped 3 cups day old breadcrumbs 6 slices bacon 1/2 teaspoon salt 1/2 teaspoon pepper

Sprinkle goose inside and out with lemon juice, salt and pepper. Melt butter in a large saucepan. Add onion and cook till translucent. Stir in apple, apricots, breadcrumbs, salt and pepper. Spoon stuffing lightly into cavity. Close opening with skewers and string. Cover breast with bacon slices. Place goose breast side up in a roasting pan. Cook in 325 oven 20-25 minutes per pound or until internal temp reaches 180 basting frequently with drippings in pan.
If its an older bird add 1 cup of chicken broth or water to the pan in the final hour of cooking and cover.
