ALLURING LAMB LIVER SPECIAL
LAMB LIVER FRY
Liver preparations are good for health. Liver contains no sugar. Rich in phosphorus, riboflavin, Vitamin-A, vitamin-B6, vitamin-C, vitamin-B12, zinc and iron which are very beneficial, liver also contain certain harmful elements like high quantities of cholesterol and saturated fats. So excessive usage of liver products is to be avoided.


Lamb Liver : 500 Grams
Ginger-garlic Paste : 2 Tab. Spoons
Red Chilly Powder: 2 Tab. Spoons
Coriander Powder : 1 Tab. Spoon
Black Pepper Powder : 1 Tea Spoon
Soyabean sauce : 2 Tab. Spoons
Turmeric powder : ! Tea Spoon
Salt : As Required
Refined Oil : 200 ml
Green Chillies : 10 nos
Curry Leaves : 1 Cup
Coriander leaves : 1 Cup
Lemon Juice : 2 Spoons
Onion Paste : 1 Cup
Onion pieces : 1 Cup

 

1. Wash and cut the lamb liver into small pieces (1 inch size).

2. Add together all the ingredients, except oil and onion pieces, and mix well. Allow to marinate.

3. Add oil to a deep bottomed pan and heat. Add the onion pieces and stir fry until onion pieces turn brown.

4. Now add the marinated lamb liver pieces with other ingredients to the boiling oil, mix thoroughly and fry on medium flame until oil shows up.

5. Add some water, mix well, put a lid on the pan and allow to simmer till the liver is cooked smooth.

6. Remove the fried liver preparation into a plate leaving behind in the pan, as much oil as possible.

7. To the same oil add the slightly split green chillies and curry leaves and fry until crisp.

8. Chop the coriander leaves into fine pieces.

Top the liver fry with chopped coriander leaves and fried green chillies & curry leaves. Serve Hot.
